Tomatoes are revered for their health benefits, but can they live up to the hype? Tomatoes are known to harbour a crazy amount of Vitamin A, C, K and B. As well as high degrees of folate and thiamine. Further to this, (yes, the list truly does go on), Tomatoes are a fantastic source of potassium, magnesium, phosphorous and copper, all of which can have extreme health benefits.
A lot of the research that is centric around Tomatoes is its lycopene content which is a well known carotenoid which has been accredited for defending against Cancer. Some study’s have found in particular that the presence of lycopene in foods such as this can have the ability to prevent Cancer cells from forming/spreading in the cases of Testicular and Breast Cancer. T o round it off, this compound can also be held responsible for fending off the onset of many issues we deal with later in life, such as Cardiovascular Disease. So maybe it does live up to the hype after all?
Continuing on from this, it has been recorded that one tomato can provide 40% of your daily intake of Vitamin C; a natural antioxidant that is pivotal to our daily health balance.
But let’s face it. It’s not always the most exciting food to eat and we’re not going to start chomping dowon on them like we would an apple, so why not try out something new? We’ve picked out our favourite recipe below:
3 onions, thinly sliced
3 garlic cloves, diced
4 tbsp olive oil
1.2kg of mixed tomatoes (you can pick out your faves)
8 thyme sprigs
1 tbsp golden caster sugar
50-85g fresh breadcrumbs
Heat oven to 180C
Heat half the oil in a pan and gently soften the onions and garlic for 15-20 mins
Add all the other ingredients to the pan, and top with the breadcrumbs – generously toss the mixture
Drizzle the top with oil
Add the sprigs
Bake for 1 hour
